Christmas Tortoni

2/3 cup macaroon cookie or vanilla wafer crumbs (about 12 cookies)

¼ cup cut-up red candied cherries

½ cup chopped salted almonds 

1 quart vanilla ice cream, slightly softened

Red and green candied cherries

Mix cookie crumbs, ¼ cup cherries and the almonds; fold into ice cream. Divide ice-cream mixture among 8 paper-lined medium muffin cups, 2½ X 1¼ inches. Arrange red cherry half and slices of green cherry on each. Freeze until firm, about 4 hours. 8 servings.
